These 2-ingredient banana pancakes are a delicious healthy lunchbox treat

Ingredients

1 banana

2 eggs

Instructions

Mash up banana in a bowl using a fork, mix in two eggs, and cook in a some coconut oil on a hot pan.

Note: It can sometimes be a little tricky to get them flipped in the pan, but be gentle, and you'll manage it just fine.

Let them cool, and send in some fresh fruit and berries with your kids to top the pancake with, and voila; the yummiest, healthiest lunchbox treat ever.
