These 2-ingredient banana pancakes are a delicious healthy lunchbox treat

Want to avoid the whole sandwiches coming back uneaten thing?

Well, try sending these delicious pancakes in with them for their school lunch, and we feel certain there won’t be a scrap of food left in their lunchbox when they return home.

The best bit?

These banana pancakes contain no flour. That’s right…NO FLOUR. And no sugar either. In fact, all they contain is banana and eggs. Yes, really. Menaning, of course, they are far healthier than regular pancakes, and yet taste so yummy your kids will be thinking they are eating the most delicious treat for lunch. Win-win.

2-ingredient banana pancakes

Ingredients

1 banana

2 eggs

Instructions

Mash up banana in a bowl using a fork, mix in two eggs, and cook in a some coconut oil on a hot pan.

Note: It can sometimes be a little tricky to get them flipped in the pan, but be gentle, and you’ll manage it just fine.

Let them cool, and send in some fresh fruit and berries with your kids to top the pancake with, and voila; the yummiest, healthiest lunchbox treat ever.
