What if you could have a cracker that is healthy, oh-so-easy to make and on top of that satisfies your need for something crunchy AND sweet at the same time?

Can’t have it all, you say? Well, in this instance it turns out that you, in fact, can.

Meet the AWESOME two-ingredient banana flax seed cracker – so easy to make that you will never again feel the need to buy unhealthy biscuits.

Seriously, it can’t get easier than this.

What you need:

½ cup flax seeds and 1 medium (browned or extra ripe) banana.

What you do:

Mash the banana with a fork until it’s creamy with just a few lumps. Add the ½ cup flax seeds and mix.

Grease a baking sheet with olive oil or cooking spray, drop 2 tbsp of the batter onto baking sheet and press flat.

Bake for 15 minutes on 175  degrees or until the edges are brown and the tops are hard.

Take out of oven and let cool.

You can eat the crackers as they are, or top with WHATEVER you like. I tried them with raspberries, but I imagine they will be equally YUM spread with some peanut butter or – if you need that chocolate fix – a thin layer of Nutella.

Also, as us mums like to always be prepared, these little beauties will make the perfect snack for lunch boxes, or bagged up to bring on a road trip or visit to the park.
