3 delicious one-pot pasta recipes that will have dinner on the table in 15 minutes flat

The dreaded dinner rush on those time-trapped weekdays is the bane of every family’s life.

The age-old questions ‘What the heck are we going to cook for dinner’ greeting us the minute we walk through the door – and not only do you ideally want it to be something that will be ready as soon as humanly possible, but the majority of us also want the food we serve up to be both tasty, fresh and healthy.

Well, guys, we have the perfect time-challenged dinners for you to make next week a breeze: One Pot Pasta.

Seriously, it sounds almost too good to be true, but you just bang a whole lot of fresh ingredients and dry pasta into a pan, and voila, 15 minutes later, dinner is on the table.

No catch.

Here are three really tasty and ridiculously quick and easy recipes from the new book: One Pot Pasta: From Pot to Plate in Under 30 Minutes by Sabrina Fauda-Role:

1. One Pot Pasta with Goat’s Cheese, Tomatoes and Olives

Ingredients

    • 250 g pipe rigate
    • 200 g cherry tomatoes, halved
    • 150 g fresh goat’s cheese
    • 125 g black olives
    • 1 small bunch of basil, torn
    • 1 garlic clove, thinly sliced
    • 1 onion, thinly sliced
    • 4 tbsp olive oil
    • 1 sprig of thyme
    • 1 sprig of rosemary
    • freshly ground black pepper
    • 1 tsp rock salt
    • 750 ml water

Instructions

Put all the ingredients into a large saucepan in the order listed. Cook for approximately 15 minutes over a medium heat, stirring regularly. About 2 cm of cooking liquid should remain at the end.

2. One Pot Pasta with Salmon and Spinach

Ingredients

    • 350 g tagliatelle
    • 125 g fresh spinach
    • 160 g smoked salmon
    • 2 large shallots, thinly sliced
    • 2 garlic cloves, thinly sliced
    • 4 tbsp double cream
    • 1 vegetable stock cube
    • freshly ground black pepper
    • 750 ml water

Instructions

Put all the ingredients into a large saucepan in the order listed. Cook for approximately 15 minutes over a mediumheat, stirring regularly. About 2 cm of cooking liquid should remain at the end.

3. One Pot Pasta Carbonara

Ingredients

  • 250 g linguine
  • 200 g smoked lardons
  • 1 onion, thinly sliced
  • 2 eggs
  • ½ bunch of chives, snipped
  • 4 tbsp grated Parmesan + a little more to serve
  • 1 tsp rock salt
  • 4 tbsp olive oil
  • freshly ground black pepper
  • 750 ml water

Instructions

Put all the ingredients into a large saucepan in the order listed. Cook for approximately 15 minutes over a medium heat, stir ring regularly. About 2 cm of cooking liquid should remain at the end. Serve with grated Parmesan.
