3 delicious things you can make with all that leftover boiled rice

Because who the heck doesn’t make too much rice – every time.

Seriously – have you ever cooked just amount of rice for dinner? Because I know I most definitively have not – and hence am always stuck with a large bowl of leftover rice when dinner has come and gone.

And few things bother me as much as having to throw out perfectly good food, meaning I am forever on the hunt for recipes that allow me to use up every scrap of leftovers I have in the fridge.

Thinking “wow – this sounds like my house too” right about now? Well, then you might want to try these:

1. Nasi Goreng

Nasi Goreng is the popular Indonesian fried rice which is traditionally served with a fried egg. It is fast, delicious and you can make it even healthier by serving it with green things like avocado and cucumbers.

2. Baked Rice Pudding

Got cooked rice in your fridge? You’re only 15 minutes away from dessert (or breakfast). You can use any kind of rice, be it long-grain or short-grain, white or brown. The same goes for milk. Whole milk is classic and will give you the most custardy results, but you can use low-fat milk if you prefer (skip skim, as it’s just too water). Non-dairy milks are great picks, too; coconut milk imparts its rich flavor into the rice pudding, and almond milk gives it a nice nuttiness.

3. Vegetable Fried Rice

Toss some garlic, onions, soy sauce and sesame oil in your frying pan, add your leftover rice and whatever veggies you have on hand, and voila – you have a new meal: vegetable fried rice! For variation, try adding pineapples, cashews, scrambled eggs and different sauces and spices.
