3 super delicious things you can make with those overripe bananas

Almost gone off is actually perfect

Trine Jensen-Burke

Few things annoy me more than having to throw out food that has gone off.

Which is why I am pretty militant about planning our meals every week and try to avoid ever hitting the shop without a list of what I actually need to buy on hand.

However, one of the products that you don’t have to worry about going bad in your kitchen is bananas. Yup, that’s right. In fact, I find myself getting a little excited when I notice that the lovely, yellow bananas I purchased are starting to look all spotty and brown.

Overripe bananas, my friends, will provide you with a near limitless amount of possibilities and should be considered a blessing, not a curse. Don’t believe us? Here are just three (out of so, so many) recipes that will back up our claim:

1. Banana Oat Breakfast Cookies

Full of bananas, whole grains, and protein, these “cookies” are a great way to start the day. You can add some chocolate chips of you want to serve these as a treat more so than an actual breakfast, but feel free to leave them out too.

2. 3-Ingredient Banana Pancakes

Brown, soft bananas make a perfect starting point for healthy, yummy pancakes.

3. Banana Bread with Grek Yogurt Frosting

If you haven’t yet learned how to make banana bread with your overripe bananas, you are not living your best life, guys. And if you are going to make banana break, make it this one – with the added Greek yogurt frosting. Because you’re worth it.
