3 healthy lunches to get the kids eating right in the New Year

It can be a struggle.

If you have a fussy eater at home then you’ll know that it can be very difficult to get them to eat a healthy lunch.

It turns into putting the same things into the lunch box day after day, and then they probably get bored of that and won’t eat it either.

We’ve come up with some healthy lunches that will hopefully get your kids on board with eating right – new year, new start and all that jazz.

Melon and crunchy bran pots

Ingredients:

  • 100g melon
  • 150g yoghurt
  • 2 tbsp fruit and fibre cereal
  • 1 tbsp mixed seeds
  • 1 tsp honey

Method:

Top melon medley with yogurt, then sprinkle over cereal mixed with seeds. Drizzle over honey and eat immediately.

Cheesy quesadilla

Ingredients:

  • 2 tortilla wraps
  • any leftover veg
  • 2 cups shredded cheese

Method:

Top the wraps with the cheese and veg, and cover with another wrap on top. Grill for 2 minutes each side and cut into triangles.

Meat roll-ups

Ingredients:

  • any deli meat
  • cream cheese
  • lettuce
  • cucumber

Method:

Lay out the deli meat and spread on the cream cheese. Lay lettuce on top. Add cucumber to the end of the meat and roll up. Cut into slices.
