3-ingredient pancakes: the healthiest, most delish recipe EVER

Every now and then a recipe comes along that is so simple, so healthy and so delicious you wonder how you ever survived without it.

This is IT. These are: flourless, gluten-free and low cal. And we’re not even joking

If you’re used to serving pancakes as a rare treat because of the high calorie count, prepare to put them back on the menu daily… whether you scoff them for breakfast with the kids, whip them up for dessert or save them to enjoy as a late night snack.

These are flourless, gluten-free, sugar-free and low in calories. Dollop of ice cream or Nutella on top: optional.

Ingredients:

1.5 ripe bananas

A quarter-teaspoon of baking powder

Two eggs

 

Here’s how:

1. Mix the eggs in a bowl with the baking powder

2. Mash the bananas and add to the eggs, mix well. This is your pancake batter.

3. Spray a frying pan with oil, heat and pour a palm-sized amount of mixture

4. When the pancake starts to rise slightly (usually about 2 minutes) , flip it over and cook the other side.

 

Serving suggestions:

On a low calorie diet? Top your pancakes with turkey bacon and a tablespoon of sugar-free maple syrup.

Make these pancakes a breakfast favourite by adding a spoon of Greek yogurt, a pinch of cinnamon and a sprinkling of blueberries.

Feeling decadent? Grate a few squares of good quality dark chocolate over your warm pancakes and allow to melt.
