3 meat-free dinners that are so delicious even vegetable sceptics will be convinced

As myself and my little girl are not huge fans of meat, I find myself constantly on the look-out for meat-free dinner recipes that are still hearty enough to keep the rest of the family from complaining.

I have long been a fan of food blogger Jeanine Donofrio, who writes the most gorgeous vegetarian food blog Love and Lemons, and so when I heard she brought out a cookbook last year, I of course had to get straight on Amazon to order my very own copy.

And the book did not disappoint.

Having tried a good few of the yummy recipes in both her book and blog already, these three have all gone down a treat with the whole family:

1. Linguini with lemon and tomatoes

Fast, healthy and really filling. And let’s face it, you can never go wrong with pasta.

2. Butternut Squash Kale & Quinoa Stew

Especially yummy when served with a fresh loaf of sourdough bread, to help soak up all that lovely sauce, this spiced fall stew is full of butternut squash, kale, quinoa and tomatoes.

3. Sweet potato surprise

My four-year-old’s new favourite dish!

This creamy casserole with mac ‘n’ cheese-style vegan sweetpotato sauce. Spinach, shallot, scallions and sage are baked in for extra nutrients and flavour!
