3 Quick And Healthy Family Brunch Recipes For The Weekend Ahead

Family weekend brunch made easy! 

We’ve teamed up with Centra and dietician Sarah Keogh to bring you three yummy recipes that pack a healthy punch.

Did you know that the average Irish daily consumption of fruit and veg is only 3.2 of the recommended 5 servings?

Give that number a boost this week by following these recipes. Check them out below.

1. Tasty Banana and Cinnamon on Wholewheat Toast

Spice up your life and your breakfast with this tasty treat. Quick and easy to make, it’s the perfect way to start your day.

Serves 1; ready in seconds!

You’ll need:

  • 1 finely sliced banana
  • 1 slice of toast
  • Half a tsp ground cinnamon
  • 1 tbsp honey

How to:

  • Top your buttered toast with banana slices.
  • Then drizzle over the honey and sprinkle with the cinnamon.

Mmmmmm, it’s just the ticket for the day ahead!

2. Avocado and Egg

This tasty treat can be garnished with chopped tomatoes, coriander or ground paprika.

Serves 2; ready in 20 minutes!

You’ll need:

  • 1 avocado
  • 2 medium free range eggs
  • 1 pinch of pepper

How to:

  • Make sure your avocado is ripe and ready to eat.
  • Cut the avocado in half, remove the seed and carefully place in an ovenproof dish.
  • Carefully remove a little more of the avocado from the centre and then crack your egg into the hole.
  • Bake in a hot oven 230°C/210°C Fan/Gas 8 for 15-20 minutes.
  • Remove and serve with a little freshly ground pepper.

3. Crunchy Granola and Fruit

Making your own granola is incredibly simple. Customise your breakfast with your favourite dried fruit and nuts!

Serves 4; ready in 25 minutes!

You’ll need:

  • 1 handful of dried cranberries
  • 200g oats
  • 8 tbsp honey
  • 1 handful raisins
  • 1 handful seed mix
  • 3 tbsp sunflower oil

How to: 

  • Start by heating your oven to 190°C/170°C Fan/Gas Mark 5.
  • Spread the oats in a layer in a large roasting dish. Drizzle over the honey and sunflower oil, mixing well and breaking up any big clusters with a fork.
  • Roast for 20 to 25 minutes, mixing it two or three times to make sure the oats are evenly baked.
  • Remove from the oven and allow to cool. Mix in the cranberries, raisins and seeds. Serve with milk or natural yoghurt and a drizzle of honey.
  • The granola will keep for up to a month in an air-tight container.
