Do your kids eat enough fruit and vegetables?
If you answer ‘yes’ to this one, fair play, God bless and pat yourself on the back, mums. You are our hero. For the rest of us, there are smoothies.
If you, like me, are always on the hunt for new variations to tempt you littles with, here are three smoothies we are obsessed with in my house at the moment. Me because of the vegetable content, the kids because of the creative names and colourful paper straws I serve them with.
1. Green-O-Saurus Smoothie
Ingredients
1 1⁄2 cups of coconut water
2 handfuls of baby spinach
3 stems of mint leaves {leaves only}
4 tbsp of coconut milk
1 banana {frozen}
1⁄4 of an avocado
3 ice cubes
1 teaspoon of powdered greens (optional)
2 teaspoons of honey or agave {or to taste}
Cacao nibs, to sprinkle
Instructions
Throw into blender or Nutribullet, whizz, serve.
2. Berry-Licious Pink Smoothie
Ingredients
1 handful of frozen blueberries
1 handful of frozen raspberries (or strawberries)
1/2 cup of cranberry juice (sugar-free)
1/4 cup of plain or vanilla Greek yoghurt
2 ice cubes
Instructions
Blend, serve, sip.
3. Double Orange Smoothie
Ingredients
1 cup peeled, chopped carrots
1 orange, peeled and chopped
1 frozen banana, chopped
1 cup ice
1 cup orange juice
Directions
Layer the ice, banana chunks, orange segments, and carrots in the blender, add the orange juice and blend until smooth.
