More than just your regular delicious microwave mug cake, these recipes are healthier so will satisfy sweet cravings in no time and with no guilt.
1. Sweet potato mug cake
Via Oh My Veggies
Ingredients:
- 1 tablespoon ground flax seeds
- 1/4 cup water
- 1/4 cup mashed cooked sweet potatoes
- 2 tablespoons almond milk
- 1/4 teaspoon pure vanilla extract
- 1/4 cup packed brown sugar
- 7 tablespoon self-raising flour
- Pinch of salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground ginger
- 3 tablespoons toasted pecans or walnuts, chopped (optional)
Method:
In a large microwave safe mug, mix together the flax seeds and water with a fork and set aside for 5 minutes to thicken. Stir in the sweet potato, almond milk, vanilla, and sugar. Add the flour, salt and spices. Beat until smooth. Fold in the nuts. Divide the batter between two mugs. Microwave separately for 1 1/2 to 2 1/2 minutes each until risen and firm.
2. Oatmeal almond butter mug cake
- 3 tablespoons milk
- 1 tablespoon olive oil
- 1 tablespoon sugar
- 3 tablespoons flour
- 1 1/2 tablespoons rolled oats
- 1 tablespoon finely chopped pecans, plus more to garnish
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon (optional)
- Pinch nutmeg (optional)
- 1 tablespoon almond butter, plus more to garnish
Method:
In a large mug, mix together the milk, olive oil, and sugar. Mix in the flour until smooth, then stir in the oats, pecans, baking powder, salt, and cinnamon and nutmeg if using. Dollop the almond butter on top and push in gently so it is partially submerged in the cake batter. Microwave on high for 30 seconds, and then in 15-second bursts until the top looks dry and cooked and springs back when pressed. Let stand for at least 5 minutes before eating. Top with additional almond butter.
3. Avocado mug cake
Ingredients:
- 2 tablespoons fully mashed avocado
- 4 tablespoons plain flour
- 3 tablespoons granulated sugar
- 1/2 teaspoon baking powder
- 2 1/2 tablespoons milk
- 1/2 tablespoon vegetable oil
Method:
Add all ingredients into a large microwave safe mug. Whisk until a smooth batter forms. Make sure you have mashed any avocado pieces. Cook in the microwave for 1 minute 20 seconds. Your cooking time may vary slightly. Let cake cool a few minutes before eating.
4. Paleo blueberry muffin

Ingredients:
- 3 tablespoons coconut flour
- 1 tablespoon honey
- 2 tablespoons unsweetened applesauce
- 1 egg
- 3 tablespoons blueberries
- a dash salt
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
Method:
Mix everything together in a microwave safe mug and cook for two minutes.
