5 completely delicious recipes your teens can make (for the whole family!)

One of the best things you can do for your children as they grow up is teach them how to be independent.

The best thing about independence? The freedom to choose your own meals.

Happily, encouraging your teenagers to get cooking while they still live under your roof also has another benefit: a live-in chef ready to put lunch, brunch or dinner on the table once or twice a week!

Start them off with these delights: easy, tasty recipes that the whole family can tuck into afterwards AND that won’t break the bank…

 

1. Triple Decker Chocolate Peanut Butter Bars

Ingredients

  • 110g salted butter, softened
  • 400g + 4 tablespoons creamy peanut butter
  • 2 teaspoons vanilla extract
  • 125g powdered sugar
  • 500g semi-sweet chocolate chips

Here’s how:

Line a 20cm X 20cm square brownie pan with parchment paper.

Place half of the chocolate chips and 2 tablespoons of peanut butter in a small sauce pan.
Heat over low heat, stirring often until melted and smooth.

Pour the chocolate mixture into the prepared pan, make sure layer is smooth and even.
Cover and place in the fridge for 30 minutes to harden.

Meanwhile, add the stick of softened butter, 300g of creamy peanut butter, 2 tsps. vanilla and
the powdered sugar to a large mixing bowl or the bowl of a stand mixer. Beat until smooth and creamy.

Spoon the peanut butter mixture over the chocolate layer into a smooth layer. Place back in the fridge.

Place the remaining chocolate chips and remaining 2 tablespoons peanut butter in a small sauce pan.
Heat over low heat, stirring often until melted and smooth.

Pour the chocolate mixture over the peanut butter layer, smooth the chocolate out into an even layer.

Cover and place in the fridge for 1-2 hours or until ready to serve. Slice into bars and keep refrigerated.

2. Two ingredient pizza dough

Ingredients

  • 190g self-rising flour
  • 250g plain Greek yogurt.
  • Plus the pizza toppings of your choice, of course!

Here’s how:

In the bowl of an electric mixer (use the dough-hook attachment) mix the flour with the Greek yogurt on low speed to combine.

Remove the dough from the bowl, place on a well-floured surface and knead for about five minutes. (Note: If the dough seems too wet or sticks to your work surface, you can add flour in small amounts as needed.)

Now roll the dough into a pizza-sized circle, and place it on a round baking sheet. Brush the surface with olive oil and add the toppings (mozzarella, pepperoni, fresh pepper, sweetcorn)

Place the baking sheet in a pre-heated oven, and bake at 225°c for 10 to 12 minutes.

 

3. One Pot Salmon and Spinach

Ingredients

  • 350g tagliatelle
  • 125g fresh spinach
  • 160g smoked salmon
  • 2 large shallots, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 60mls double cream
  • 1 vegetable stock cube
  • Freshly ground black pepper
  • 750ml water

Here’s how:

Put all the ingredients into a large saucepan in the order listed.

Cook for approximately 15 minutes over a medium heat, stirring regularly. About 2cm of cooking liquid should remain at the end.

 

4. Chicken and chorizo pasta

Ingredients, serves 4

  • 300g penne pasta
  • 40g, chorizo, peeled and diced
  • 1/2 small red onion
  • 100g mushrooms
  • 40g sun-dried tomatoes
  • 300g chicken, sliced
  • 2 tablespoons tomato paste
  • 100ml water
  • 6 tablespoons mascarpone (or cream cheese)
  • Grated parmesan and freshly ground black pepper to serve (optional)

Here’s how:

Cook the pasta in salted boiled water until tender, drain and rinse.

Peel and slice the chorizo and the red onion. Slice the mushrooms and the sun-dried tomatoes.

Place a non-stick pan over a medium high heat, add the chorizo, the red onion, the mushrooms and the sun-dried tomatoes and stir over the heat to prevent sticking. Add the chicken pieces and continue cooking until the onions are softened and the chicken is browned.

Increase the heat, add the tomato paste and stir in. Pour in the water and allow to bubble for a few minutes before stirring in the mascarpone.

Add the cooked pasta and mix well to coat the pasta thoroughly and heat through. Divide between 4 bowls and serve topped with a little freshly ground black pepper and grated parmesan.

 

5. Three ingredient pancakes

Ingredients:

  • 1 or 2 ripe bananas (depending on size)
  • A quarter-teaspoon of baking powder
  • Two eggs

Here’s how:

Mix the eggs in a bowl with the baking powder.

Mash the bananas and add to the eggs, mix well. This is your pancake batter.

Spray a frying pan with oil, heat and pour a palm-sized amount of mixture.

When the pancake starts to rise slightly (usually about 2 minutes), flip it over and cook the other side.
