Ditching meat for a vegetarian (or even vegan) diet has become increasingly trendy the last few years, something many credit popular healthy food bloggers like for instance Deliciously Ella and Green Kitchen Stories for.

And even if you are not ready to completely leave meat behind, most experts will agree that even reducing the amount you eat can have massive benefits, not only for your own health but also, as part of a bigger picture, for the environment.

Many have embraced the concept of Meat Free Monday, which, just like it says on the box, meaning you avoid eating any meats on this day of the week.

And if this is you, there is no need to worry about what the heck you are going to eat today. We have rounded up five easy peasy veggie dinners that not only taste delicious, but that will also have dinner on the table in 30 minutes or less.
