Aperol Spritz ice lollies

Our favourite summer tipple, in edible form… yum.

The weekend is here and boy, are we ready for it. You know your favourite orange-flavoured aperitivo? It will taste even better – and more refreshing – in ice pop form.

Aperol Spritz ice lollies are a super summery and frosty version of a classic Italian cocktail makes for the perfect boozy popsicle.

And the best news? According to this delicious recipe from foodie blog Bourbon & Honey, all that stands between you are this summer boozy treat is just four ingredients and a popsicle mould.

Ingredients

  • 2 cups of lemonade
  • 3/4 cup of Aperol
  • 1/2 cup of fresh orange juice, strained
  • Prosecco or cava

Method

  1. In a 4-cup liquid measuring cup or medium bowl, stir together the lemonade, Aperol and the juice. Divide the mixture evening among your popsicle molds. Freeze for at least an hour and then insert some popsicle sticks. Return to the freezer and freeze 6 – 8 hours or until solid.
  2. To remove your popsicles, run warm water on the outside of the popsicle mold until it releases. Place popsicle in a glass and serve with prosecco.
