Aperol Spritz ice lollies

It’s our favourite summer cocktail – in popsicle form.

Don’t you go thinking that ice lollies are just for kids, guys. Nope – we all deserve a frozen treat when the weather shows signs of heating up, and while your adult mind might automatically go to summery cocktails with ingredients like lime, soda, rum and refreshing fruit juices, let us assure you that the two can be combined.

And beautifull so, it turns out.

Just take a look at these totally delicious-looking Aperol Spritz lollies – so chic and summery, we bet the Italians would totally approve.

Aperol Spritz Ice Lollies

Ingredients

3 parts prosecco

3 parts soda water

2 parts Aperol

1 thin slice of orange

TIP: You can also add some castar sugar to your mix if you’d like your lollies a little sweeter

Instructions

Place a thin slice of orange in each icy pole mould. Combine prosecco, soda water and Aperol in a jug, stir, then fill icy pole moulds. Secure lids and sticks and freeze for at least five hours.
