Need to up your kitchen craft game to keep the kiddos entertained?
Say hello to banana sushi – the healthy(ish) new whole food snacks that we bet are going to be a win-win with both you and the kids.
Use organic bananas, if possible (to avoid pesticides), a peanut butter with no added sugar, and a chocolate with a high percentage of cacao (the darker, the better for you).
As for toppings, go to town with whatever your kids (and you) fancy. In this recipe, they have used pistachios, coconut flakes, and chia and sesame seeds for toppings, but you could easily use other smashed up nuts, even granola would work great.
Ingredients
- 3 organic bananas (or more)
- 2 tablespoons peanut butter
- Dark chocolate
- 3 tablespoons chopped pistachio nuts
- 2 tablespoons sesame seeds
- 1 tablespoon chia seeds

Peel the bananas and coat them with the peanut butter.Melt the chocolate (either by using a microwave or place it into a heatproof bowl and put it over a pan of barely simmering water).Cover the bananas with the melted chocolate and sprinkle them with the above named toppings.Let the chocolate harden for a couple of minutes, this will take about 5-10 minutes depending on how warm it is in your kitchen. On hot summer days, put them in the freezer for a few minutes.Cut them into bite-sized sushi pieces with a sharp knife. You can either eat the banana sushi right away or freeze it for an hour and two and enjoy it as easy “ice cream” bites.
