This could-not-be-easier candy cane microwave fudge is the perfect December treat

It’s beginning to look a lot like that crazy hectic leading-up-to-Christmas couple of weeks, guys, no?

Where the majority of us are running around like headless chickens, frantically checking Smyth’s opening hours, trying to clean the kitchen presses, making sure the kids have their Nativity play costumes ready and just generally switch into survival mode trying to make it until the Day itself in one piece.

And then there is the notion that you really ought to be making something homemade to bring along to all the dinner parties and festive get-togethers that will be taking place over the next couple of weeks too. Which, you know, can be enough to send any frazzled mama into a festive melt-down.

But fear not, guys. We got your back. This microwaveable white chocolate peppermint candy cane fudge could not be easier to make (like; four ingredients and a microwave!), yet has all the festive flavour you need. Bonus: It will look SO festive in a Mason jar, tied with a Christmas-red ribbon. Hostess gift? Done.

Ingredients

1 (10 oz.) package white chocolate chips

2/3 cup sweetened condensed milk

1/2 teaspoon peppermint extract

1 1/2 cup crushed candy canes or peppermint candies (YUM)

Directions

Combine white chocolate chips and sweetened condensed milk in a microwave-safe bowl. Microwave on high for 30 seconds and stir. Heat at 15 second intervals until smooth.

Place candy in a plastic bag and crush with rolling pin (or use a food processor). Mix in peppermint extract. Immediately add 1 cup crushed candies and stir to combine.

Line an 8 x 8-inch square pan with foil. Spread mixture into pan and top fudge with remaining 1/2 cup crushed candy canes. Cover and refrigerate for about 2 hours.

Remove fudge from pan and remove foil. Cut into squares.

Make everyone happy!
