These chocolate chip blondies are vegan and gluten-free (and completely delicious)

The perfect way to treat yo-self without feeling overindulged.

Hands up who really tries to clean up their (nutritional) act, but really miss a lil’ treat to go with your afternoon cuppa?

Yup, us too.

But not any more, guys.

Because we have just found the perfect guilt-free treat, that despite being flour-free (and therefor gluten-free), full of good-for-you protein (chickpeas), all natural honey, almond butter, and dark chocolate chips.

YUM.

Just give them a try and see – and we bet the kids will love them too!

Chocolate Chip Chickpea Blondie Brownies

Ingredients

Wet

  • 1 (15 oz) can Organic Chickpea (rinsed and drained)
  • 2 tsp Vanilla
  • 1/2 cup Almond Butter
  • 1 tsp Almond Milk
  • 1/2 cup Natural Honey

Dry

  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup Dark chocolate chips

Instructions

  1. Preheat oven to 180 C

  2. In a food processor, add your chickpeas until it makes a smooth paste.

  3. Add your Wet ingredients to the food processor and mix.

  4. Add all of your dry ingredients except sea salt and mix well.

  5. In a 9 x 9 pan, lined with parchment paper, add your batter and top off with sea salt and more dark chocolate chips and bake for 25 minutes. Allow them to cool for at least 20 minutes before serving.
