These Courgette Crisps Will Make Giving Up Tayto MUCH easier

If you are anything like us, you spent the best part of December scoffing all the calories. Like; All. Of. Them. 

Meaning that now it is about time to tone down the gluttony and shift your focus to healthier treats and a more, ehm, balanced diet.

But if you are finding it hard to ditch the crisps (our glass of vino every night just isn’t the same without them!), why not try this courgette version instead? Plenty of taste, but SO much better for your health (and waistline):

Tasty Courgette Chips

Ingredients

1/4 cup dry breadcrumbs
1/4 cup grated parmesan cheese
Pinch garlic powder
2 small courgettes, sliced
1 egg
spray oil

Method

1. Preheat oven to 180°C.

2. In a medium bowl, mix together the breadcrumbs, cheese and garlic powder.

3. In a separate bowl, whisk the egg.

4. Dip the courgette slices in the egg and toss in the breadcrumb mixture.

5. Place coated slices on an ovenproof wire rack coated with spray oil. Place rack on a baking sheet.

6. Bake at 180°C for 30 minutes or until browned and crisp.

7. Serve immediately, as a side or a snack.

TIP: Use whatever flavors you are into to spice these babies up. Ground paprika is great. As is a pinch of cayenne pepper. YUM.
