Cut down your carbs tonight: 3 ways with sweet potato

All for the love of sweet potato. 

Not only do they have a lower carb content than regular spuds, sweet potatoes also contain more vitamin C. A win-win situation. 

The average Irish daily consumption of fruit and veg is only 3.2 of the recommended five servings, so that give number a boost this week with these simple sweet potato recipes.

1. Sweet Potato Sliders

You’ll need:

  • 1 large sweet potato
  • 100g turkey slices or cooked turkey breast
  • 2 cups spinach
  • BBQ sauce
  • Smoked paprika
  • Garlic salt
  • 1 – 2 large tomatoes
  • 2 -3 tbsp cottage cheese
  • 2 wooden skewers

How to:

  • Wash your sweet potatoes and cut the ends off. Leave the skin on. Pre-heat the oven to 200 degrees celsius / Gas mark 6.
  • Slice your potato in 4 or 6 round slices. Then layer slices of tomato, spinach, turkey, BBQ sauce and cheese. Push 2 wooden skewers into them and sprinkle with garlic sauce and paprika.

2. Lasagne with Sweet Potato

A tasty twist on one of our favourite recipes. Sweet potatoes are a healthy alternative to pasta sheets to bring a sweet note to a delicious classic.

Serves 4

You’ll need: 

  • 440g steak mince
  • 1 onion
  • 1 475g jar original pasta sauce
  • 2 bell peppers
  • 4 sweet potatoes
  • 200g white cheddar cheese
  • 1 sachet white sauce

Method:

  • Slice the sweet potato and place on a baking tray, par bake these in the oven on 180 degrees for 10 mins.
  • In the meantime, dice the onion and sautee in a pan. Add the mince and cook until brown. Chop the pepper and add to the pan. Then add the pasta sauce. Cook in the pan for 5 mins then remove from the heat.
  • Prepare the white sauce in a pan using a sachet of white sauce and milk
  • Layer the sweet potato, mince mixture and a light layer of the white sauce into a small baking pan, sprinkle some cheese on top. Bake in the oven for 25 mins or until golden brown. Serve with a side salad and enjoy!

3. Easy Homemade Sweet Potato Crisps

Serves 4, ready in 20 minutes

Sweet Potato Crisps

You’ll need:

  • 2 tsp olive oil
  • 1 medium sweet potato – scrubbed
  • 1/2 tsp paprika
  • 1/4 tsp salt

How to: 

  • Pre-heat the oven to 375°F and arrange a rack in the middle.
  • Slice the sweet potato into very thin rounds, peel sweet potatoes and slice thinly, using either a mandolin or sharp knife. Know that chips that are too thick in parts won’t crisp up all the way.
  • In a large bowl, toss sweet potatoes with olive oil, paprika, and salt using your hands until thoroughly coated.
  • Place sweet potato chips in a single layer on a rimmed baking sheet covered with parchment paper.
  • Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes.
  • For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.
