Here’s what you’ll need to make your best Easter Sunday roast yet.

The ingredients:

  • 1 large chicken
  • 8 tbsp of YR Sauce
  • 2 Magic Oven Bags
  • 4 potatoes
  • 2 parsnips
  • 4 Carrots
  • 8 pieces of asparagus
  • Garden Peas
  • 1 tbsp rosemary
  • 1 tsp mixed herbs
  • 1 tsp flour
  • 3 tbsp honey
  • 150ml vegetable oil

Once you’ve gathered these simple, Irish ingredients, it’s time to make the magic happen.

The Chicken

Mix five tbsp of YR Sauce and 1 tbsp of rosemary in a Magic Oven Bag, until the inside of the bag is fully coated, before popping your chicken in and sealing. Place the chicken on an oven tray in the centre of the oven. Remember, when cooking a chicken at 190°C in the centre of your oven, cook for 25 minutes for every 500g and then add an extra two minutes on top. Jen used a large 1900g chicken, which took approximately two hours to cook.

The Roasties

Peel and quarter four large potatoes and parboil them for five to seven minutes, or until they’re beginning to soften a little. Place a tray covered with vegetable oil into the oven for 10 minutes, until the oil is piping hot. Drain the water from your potatoes, pop the lid back on the pot and give it a good shake to soften the edges. Carefully spoon the potatoes into the hot oil, turning them over a couple of times to ensure each potato is coated in oil. Cook them at 190°C for 30 to 40 minutes, depending how crispy you like your spuds. (We like them extra crispy around here.)

Honey Glazed Parsnips

Peel two parsnips and remove the core. Slice them into batons and parboil them for five minutes. Using a new Magic Oven Bag, sprinkle in one tsp of flour and two tbsp of honey and spread it around the bag. Add your parboiled parsnips, seal the bag and place on a tray in the oven to cook for 30 minutes.

Flavour-filled Gravy

Add boiling water to three tbsp of onion gravy, one tsp of mixed herbs and three tbsp of YR Sauce.

Peas, Carrots and Asparagus

Peel and chop your carrots and boil along with your garden peas and asparagus. Simmer the peas and carrots for 20 minutes, but just add the Asparagus for the last five minutes.
