Flammkuchen: A fancy weekend sandwich to make right now

There’s something about autumn afternoons that makes a comfort food brunch or lunch even more appealing than usual. 

Right now we’re on a constant hunt for recipes that are made for whipping up in a cosy kitchen, wearing woolly socks and your husband’s ancient hoodie, and devoured with a big pot of tea.

Key to the fun is an unfussy ingredient list – you want to spend more time eating than cooking, after all.

This moreish festival of crusty bread, melty cheese and tasty ham, is a take on the classic south German dish Flammkuchen, a kind of rectangular pizza.

Sliced rustic loaf works just as well as a base, simply load up the topping and bake until golden brown.

Ingredients

Makes 8

1 cup sour cream (200g)
1 small dash of cream
1 red onion (diced and sauteéd)
100g ham, chopped into cubes
150g grated cheese (Gruyère works well too)
8 slices of bread
Salt & pepper
Chives
Method:
Preheat the oven to 200 ° C.
Cover a baking sheet with baking paper.
Mix the onion, ham, creme fraiche and cream until smooth and stir in the cheese.
Spread the mixture on the bread.
Season with salt and pepper and top with chopped chives.
Bake in the oven for 15 minutes.
Devour!
