Gloriously gooey brownies that are actually kind of healthy too? You’re welcome

Some days just calls for a little bit of chocolate – no matter how much on the straight and narrow, nutritionally speaking, you are trying to be.

And we got just the ticket – these brownies will deliver all the chocolate hit you so desperately crave, while still being all sorts of good for you.

I guess sometimes it really is true, you really can have your cake and eat it too!

Quinoa Brownies

Ingredients
  • ½ c quinoa (uncooked)
  • ½ cup cocoa powder
  • ½ c coconut sugar
  • ¼ cup maple syrup
  • ¼ cup coconut oil (melted)
  • ¼ cup almond milk
  • 2 eggs (or flax eggs)
  • 1 tsp baking powder
  • 1 tsp vanilla
Instructions
  1. Cook your quinoa according to package directions, and let cool completely.
  2. Preheat your oven to 350 degrees, and line an 8 x 8 pan with parchment paper.
  3. Start by adding your quinoa to the food processor, and blend until a paste forms.
  4. Next add the rest of your ingredients to the food processor, and continue to blend until everything is incorporated.
  5. The brownies will be quite thin in texture, but they should not be too liquid.
  6. Pour your brownie mixture into the pan, and bake for 30-35 minutes, until a toothpick comes out clean.
  7. Let cool, cute into 12 pieces, and enjoy!
  8. Store in an air-tight container in the fridge for up to a week (if they last that long!)
