Healthy, no-bake unicorn cookies (because Sundays can be long AF)

Paleo, vegan, gluten free, dairy free, refined sugar free and grain-free – and yet bound to go down an absolute goddamn treat with the kids. 

How’s that for parenting win, my friends?

Even better – these no-bake cookies could not be easier to make, requiting only four simple ingredients and voila; done.

Better yet? Just let the kids into the kitchen to make these themselves while you kick back with a latte – I mean; there is not even an oven required, so you don’t even have to worry about someone burning themselves.

No-bake vegan unicorn cookies

Ingredients

  • 3/4 cup coconut flour
  • 2 cups smooth cashew butter can sub for any nut or seed butter of choice
  • 1/2 cup pure maple syrup
  • 1-2 tbsp sprinkles of choice

Instructions

  1. Line a baking tray or large plate with parchment paper and set aside.

  2. In a large mixing bowl, add your coconut flour. Add your cashew butter and pure maple syrup and mix until combined. Stir through your sprinkles. If batter is too thin, add more coconut flour until a thick batter remains. If batter is too thick, add some milk or water until a thick batter remains.

  3. Using your hands, form small balls and place onto the parchment paper. Press each ball into a cookie shape. Refrigerate for at least 30 minutes to firm up.
