Looking for something to bake this weekend? These healthy flapjacks sound delicious!

This week is National Porridge Week and to celebrate Flahavan’s have asked a host of celebrities for their healthy oat recipes.

Kathryn Thomas has kindly given over her favourite one for healthy flapjacks. They include lots of dried fruit and nuts and the all important ingredient, oats.

Ingredients:

400 grm Flahavan’s Porridge Oats

300 grm pitted dates

100 grm Sunflower seeds

3 tblsp coconut oil

50 grm shredded coconut

100 grm dried cranberries

100 grm dried raisins

50 grm walnuts

4 tblspn chia seeds

300 ml water

2 tsp cinnamon

Method:

1. Preheat oven to 200 deg.

2. Combine Chia seeds and water in a jug and let it sit for approx. 10 mins until a gel forms.

3. Place the dates and coconut oil in a saucepan and gently melt for approx. 5 mins until the dates are soft.

4. Place the date mixture in a food processor and blitz to a paste.

5. Add the Flahavans porridge oats, sunflower seeds, raisins and cinnamon to a mixing bowl and stir in the date mix. Add the chia gel and mix thoroughly.

6. Line a baking tray with baking paper or grease with coconut oil. Then place the mixture onto the tray and spread evenly across.

7. Place tray in the oven for approx. 35 mins or until the top turns golden. Cool in the tray for 15 mins before cutting it into bars.

8. Store the bars in an airtight container at room temperature
