These spicy vegetarian cauliflower wings will probably change your life

Oh, good god.

Not eating meat comes with its perks; you’ve more energy, you’re less likely to give yourself food poisoning when cooking, and you don’t contribute to the killing of animals.

All positive things.

However, not eating meat can also come with its downfalls… namely the fact that you can’t enjoy buffalo wings anymore.

A true tragedy.

Not all is lost though because cauliflower hot wings are a thing and you’re about to learn how to whip up the most delicious ones you’ll ever taste.

And yeah, we know, if you’ve never had cauliflower wings before you’re probably thinking, ‘what? They can’t possibly taste anything like buffalo wings. That’s stupid.’

It’s not stupid though, because somehow, for some reason we will never understand, they are suspiciously similar to regular meat-filled wings.

It’s weird and we can’t explain it but we won’t be questioning it either.

Here’s how to make some unreal ones.

You will need:

  • One head of cauliflower (torn into small pieces)
  • 100g cup brown rice flour
  • Sea salt
  • 1 tsp spicy curry powder
  • 30g red curry paste
  • 2 tsp coconut oil
  • 100ml cup unsweetened almond or dairy milk
  • Some water
  • Blue cheese sauce or garlic or whatever you love to dip your bits in

Here’s what you do:

1. Preheat your oven to 220C and line a baking tray with some non stick paper.

2. Mix your dry ingredients together in a bowl and then throw in your milk and about six tbsp of water. Stir until the mixture is thick enough to pour. Add more water or flour as necessary.

3. Coat the cauliflower pieces in the spicy batter and place individual pieces on the baking sheet, giving them enough room apart.

4. Bake the pieces for 25 minutes. In the mean time, make a wet coating consisting of curry paste, coconut oil, and some tablespoons of maple syrup. Coat the cauliflower in this, place them back on the tray and bake for another 20-25 minutes until the edges are browning.

5. Remove from the oven, dip into some dip, and enjoy immediately.
