A Really Easy Alternative To Christmas Pudding – Chocolate Biscuit Pudding

There are lots of contentious food items at Christmas (did someone just say ‘brussels sprouts’?!) and the poor, innocent Christmas pudding would appear to be one of them.

No matter how much I try to dress up a pudding, whether it be with custard, cream or delicious brandy sauce, some of our friends and family just will not be convinced.

But lo and behold, we have the solution! Ladies and gents I give you what looks like a pudding but is in fact NOT a pudding: it’s a chocolate biscuit pudding cake!
Here’s how you do it:

  1. Crush 250g biscuits (digestives/rich tea/ginger nuts) into breadcrumbs
  2. Melt 150g milk choc, 150g dark choc
  3. Mix the choc with 100g butter and 150g golden syrup
  4. Add biscuit crumbs
  5. Add any extras you like such as marshmallows, chopped up favourite chocolate bars (malteasers, kit kats etc are yum)
  6. Lightly grease a 2 pint pudding bowl
  7. Push the entire cake mixture firmly down into it and pop it in the fridge overnight
  8. To decorate: melt and pour some white chocolate over the top and pop on a decorative sprig of holly
  9. Amaze all your pudding-phobic friends!
