Author and cook Roz Purcell has shared a delicious recipe for oat and chocolate cookies that she says takes TWO minutes. The recipe is part of her contribution to Flahavan’s Two Minute Energy for Life campaign.
She has kindly shared her recipe with us and we can’t wait to try it. We’re slightly skeptical about the two minutes but once you have your ingredients ready then it should be lightning-quick to blend and scoop onto a baking tray.
Here’s the full recipe and method.
150g Flahavan’s oats3 tbsp. honey4 tbsp. smooth peanut butter2 tsp vanilla extract8 tbsp. almond milkPinch sea salt (Optional)Topping – 50g dark chocolate to drizzle
1. Preheat the oven to 200C.2. In a blender, combine the cookie base ingredients into a dough texture.3. Spoon 1 tbsp. sections of the dough mixture onto a baking tray lined with parchment paper.4. Press down each cookie to roughly 3cm in height and shape on the baking tray.5. Bake the cookies for 15-20 minutes.6. Drizzle the cookie with melted dark chocolate and enjoy.
