This salad has almost a million saves on Pinterest (and you’ll soon see why)

Summer is here, and if you are anything like us, you love just flinging a chicken breast on the bbq and whipping up a salad to go with it – dinner sorted in no time.

Salads are a tricky customer, though, especially if you are eating one in an attempt to be healthy. Make them too simple, and you’ll find it is pretty boring and tasteless, to be honest. Give them a tonne of flavour and interest, and chances are vast what is making your salad so delicious today is a generous heaping of (high in fat or sugar) salad dressing.

This one, though, is apparently the answer to all your salad prayers, according to Pinterest. Curious? Yes, us too.

Last year, Women’s Health asked the trend spotting pros at Pinterest to find some of the top-pinned, get-fit salad recipes, and they came up trumps. Word on the street (and on at Pinterest HQ) is that everyone is currently raving about this simple cucumber, tomato, and avocado salad – courtesy of blogger  Natasha’s Kitchen.

The magazine enlisted the advice of New York City–based dietitian Keri Gans to get her two cents on why salad is being pinned by anyone and everyone at the moment, and Gans explained that both cucumber and tomato are low in calories (cucumbers are actually mostly water), and the good-for-you fat in avocados is super gratifying, so she was not surprised this simple recipe had become a big hit with those trying to stay (or get) healthy.

Cucumber, Tomato, and Avocado Salad

Ingredients

Avocados
Fresh coriander
Cucumber
Lemon juice
Red onion
Roma tomatoes
Black pepper
Sea salt
Extra virgin olive or sunflower oil

Directions

Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large bowl.

Drizzle with olive oil and lemon juice.

Now, eat up.
