Saucepan Kids: Easy Peasy Shortbread

NOM NOM! This shortbread is so easy the kids can help out too.

This week’s guest blogger, Debbie Woodward, is the founder and driving force behind the award-winning blog Saucepan Kids. Debbie is mum to three adventurous eaters and through her own experiences with her kids in the kitchen she decided to set up the site in 2012 to encourage more families to get cooking together. Next up these tasty and super quick shortbread biscuits.

Debbie says:

“Kids of any age can help out with this recipe. They’ll enjoy the responsibility of rubbing the flour and butter together and also cutting out the shapes. Our 9 year old likes to make these biscuits all on his own, so he gets all the credit!”

Easy Shortbread Biscuits 

Makes 10 biscuits

Ingredients:

150g plain flour

100g butter (room temperature)

50g sugar

1 tsp vanilla essence (optional)

Directions:

1 Preheat the oven to 150°C or Gas 2. Place the flour into a large bowl.

2 Cut the butter into cubes and rub into the flour until it resembles a breadcrumb mixture.

3 Add in the sugar and work it together until it forms a firm dough (this takes a little while).

4 Tip out the dough, wrap in cling film and place in the fridge for 15 minutes to rest.

5 Sprinkle a little sugar onto the counter and roll out the dough (not too thin).

6 Cut out shapes and place onto a baking tray covered with parchment paper.

7 Bake for about 7-10 minutes until golden brown (length of time varies depending on how hot your oven is).

8 Place on a wire rack to cool.

Variation: For chocolatey biscuits, use 110g plain flour and and 40g cocoa powder
