Green smoothies are plastered all over the internet, but few actually taste nice. Fear not, this delicious mint one is your quick and delicious breakfast lifesaver.

It’s January which means that inevitably, most of us are trying to eat a little bit healthier. No need to get too glum, however, because healthy food need not be bland or boring.

The key to sticking with a healthy eating lifestyle is to make sure that you don’t feel deprived. While green smoothies and juices are undoubtedly good for you, let’s face it, they can often taste less than pleasant.

The addition of mint in this recipe will really change your opinion on green smoothies. It’s refreshing, flavourful and will get you and the family off to a great nutritional start in the morning.

The recipe serves one (quite generously!)

You will need:

  • 4-5 leaves of fresh mint (or more depending on preference)
  • A generous handful of spinach
  • 1 frozen banana (you could just use a fresh one, but frozen makes the smoothie lovely and cold and extra refreshing)
  • 400ml unsweetened almond milk (I’d recommend using unsweetened over sweetened here as the smoothie turns out too sickly if you use sweetened.)

Just blend and enjoy! This is a perfect one to have at home or on the go, if you’re one to have breakfast al desco.

There are plenty of nutritional benefits in the ingredients in this smoothie, such as an iron boost from the spinach – an important one if you’re vegan/vegetarian – and the potassium from the banana is a key electrolyte for things like nerve function, moving nutrients into cells and regulating your heartbeat.

Bananas also contain B6 which is necessary for balanced hormones….but most importantly, they add a lovely sweetness and if you’re anything like me, sweet things are paramount to your happiness.

The star ingredient, however, is the beautiful fresh mint. Mint is great for aiding digestion and is also a natural stimulant, giving you plenty of energy for the day ahead.

So keep calm in the morning and start your day with this green mint smoothie. Our body is a temple after all *until 6 pm when the sugar cravings hit and copious Hobnobs are devoured. What can we say? We tried.
