The throw-together low-calorie lunch we’re loving this week

Tired of the fat-bomb sandwiches from the local deli? Bored of Cup O’Soup? What you need is a lunch make-over. 

Whether you eat your second meal of the day at your desk with your staff or on your sofa with the kids, the best lunches are tasty, low in calories and packed with protein and nutrients.

This simple but deceptively delicious little recipe covers all three of those bases. Mix up a double batch and keep it in the fridge to devour at 1pm.

ASIAN QUINOA SALAD
4 cups of white quinoa, cooked as directed on box
1 cup of red cabbage, finely sliced
1 cup of carrots, peeled and julienned
1/4 cup of chopped scallions
1/4 cup of finely sliced radish

Dressing:
1 teaspoon of toasted sesame oil
Juice of 1 lemon
4 tablespoons of Tamari sauce
2 tablespoons of rice vinegar
2-4 tablespoons of water
Salt/Pepper to taste

Combine all salad ingredients in bowl. Whisk dressing ingredients in separate bowl and pour over quinoa. Mix well and serve.
