The weekend is finally here, and what better way to celebrate than take a beloved and classic breakfast treat…and combine it with an equally beloved dessert.
Earlier this week, we stumbled across this recipe for banana bread pancakes over on Creme de la Crumb – and, well, it was just too tasty not to share.
Here’s what you need.
- 1 cup flour
- 1 tablespoon sugar
- 1 tablespoon brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 cup milk
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla
- 2 medium very ripe bananas
- 1/3 cup shelled pecans or walnuts, roughly chopped
And, if you fancy it, you can always add syrup or some chocolate chips.
Here’s what you need to do.

Preheat a skillet, pan, or griddle to medium heat – or around 275 degrees.

Meanwhile, in a medium bowl, whisk together flour, sugar, brown sugar, baking powder in salt. In another bowl, mis together your wet ingredients: egg, milk, butter, vanilla and mashed bananas.

Add the wet ingredients and the dry ingredients togAdd dry ingredients to wet ingredients and mix until just combined. Gently stir in nuts.

Lightly grease your preheated skillet. Pour 1/4 cup batter onto the skillet. Cook 1-2 minutes until edges begin to look “dry”. Flip with spatula, then cook another 1-2 minutes. Repeat with remaining batter. Serve with syrup and chopped nuts as desired.
