No-bake fudge squares: Good whole food to put you in a really good mood

As well as being no-bake, these delicious fudge squares are made with minimal ingredients that are all natural and all good for you.

Free from dairy, grain and refined sugar, they’re the perfect I-want-a-treat-but-I-don’t-want-to-have-a-bad-treat treat.

Ingredients:

  • 1 cup pitted dates
  • ½ cup almonds
  • ½ cup walnuts
  • ¼ cup + ¼ cup raw cacao powder
  • 2 ripe bananas
  • 4 tbsp almond butter
  • 4 tbsp honey

Instructions:

  1. Put dates in a bowl with warm water. Allow to soak for 30 minutes, then drain.
  2. Mix together the dates, almonds, walnuts and ¼ cup cacao powder, then blend well.
  3. Spread mixture in a 9×5 baking pan until evenly distributed, and press down gently with a spoon.
  4. Mix together the bananas, almond butter, honey and ¼ cup cacao powder, then blend well.
  5. Spread mixture over bottom layer.
  6. Place in freezer for 30 minutes.
  7. Cut into 16 squares.

Make sure you re-freeze any squares that haven’t eaten (yeah, right) as they have a tendency to melt if left at room temperature for too long. Don’t worry, they’ll soften up again after about a minute out of the freezer.
