These super-easy, super-healthy breakfast cookies will go down a treat
Mornings in my house are hectic.
This despite me getting up half an hour before the kids – to get a head start – and despite meticulously planning and putting out our outfits the evening before.
Still, somehow, between waking and getting dressed and brushing hair and packing lunchboxes and breaking up fights over the most bizarre toy and looking for stray socks and making sure we have all we need and so on and so forth, things can get hectic.
Which is why I welcome any solution that can shave minutes of our time in the mornings, ensuring we actually get out the door when we need to.
Enter these really yummy (and healthy) breakfast cookies – perfect for those mornings when you just don't have time time to prepare much else. Full of bananas, whole grains, and protein, far from unhealthy, these "cookies" are actually a great way to start the day.
(I know this recipe calls for chocolate chips to be added, but I skip these, and my kids, bless them, are none the wiser!)
