This delicious fresh salad will be your summer party lifesaver

People coming around and no time to whip up something?

This salad will save your life.

Not only does it look the part, there is also literally zero effort involved, and yet everyone will be fawning at your culinary skills.

Fresh Caprese Salad With A Twist

(Serves 4-6 people)

Ingredients

Salad

  • 2 balls good-quality mozzarella cheese
  • 300 g ripe mixed tomatoes **
  • Homemade croutons
  • Small bunch of radish
  • 80g Calamata olives
  • sea salt
  • freshly ground black pepper
  • extra virgin olive oil
  • 1 punnet of Basil Micro-herb
  • Mixed seeds such as seseame, sunflower and pumpkin (optional)

** Try and use yellow, hybrid, cherry, rosa or vine tomatoes to create contrasts and shapes

Basic Salad Dressing

  • 60ml Extra virgin Olive oil
  • 15ml Apple cider vinegar
  • 5ml Mustard
  • Pinch of salt

Method

Salad

  1. Using a large platter, place the cheese first. You could tear it into chunks or slices or leave whole.
  2. Place the rest of the ingredients on the platter and garnish with micro-herbs, salt and pepper, ending
  3. with a scattering of mixed seeds. Dress with olive oil or dressing.

Basic Salad Dressing

  1. Add all of the ingredients to a jar, screw on the lid, and shake until blended. You can also whisk the ingredients together in a bowl or whirr them together in a blender.
  2. Taste and adjust seasonings if desired. Add to salad, toss, and serve.
  3. Keep leftover dressing in a sealed jar in the refrigerator for 2 – 3 days.
