A yummy Coconut Ice Cream recipe to make with the kids this weekend

You scream, I scream, we all scream for ice cream!
Ice cream is a firm favourite in my house and it's actually really easy to make your own at home.
With the weather predicted to pick up over the next few days why not try making this yummy and healthy coconut ice cream with the kids?
To make this coconut ice cream recipe you will need:
1 x 400ml tin Asia Specialties Coconut Milk
1 x 397g tin Dessert Menu Sweetened Condensed Milk
50g The Pantry Icing Sugar
You'll be able to pick up these ingredients in your local supermarket like Aldi.
Once you've gotten all your ingredients together mix the condensed milk, icing sugar and coconut milk together until you get a smooth creamy texture.
Then put the mixture into the chilled freezer proof bowl and churn for about 25 to 30 minutes.
After you've done that you can either eat straight away or put into a container and freeze for an after dinner treat.
There are lots of ways that you can add a little extra to your coconut ice cream too, like serving it with wafers and syrup.
Why not try adding the grated rind of a lemon and lime to the mixture, or replacing the icing sugar with 2 x tablespoons of honey and adding 5g of chopped fresh mint?
