A yummy Fudgy Banana Yogurt Muffins recipe to make with the kids today

Melissa Carton

A nice mid-week treat.

I know I’m not the only one who has gone on a baking buzz since the last few months as my social media is filled with lots of homemade baked treats.

Baking with the kids is a particularly good way to pass the time and this recipe is one that they are sure to love.

The ingredients that you will need to make these yummy muffins are;

• 250g Self-raising Flour
• 2 tsp Baking Powder
• 40g Fudge (Chopped into small pieces)
• 50g Soft Brown Sugar
• 75g Butter
• 125g Organic Bio Kids Banana Yogurt
• 1 tsp Vanilla Essence
• 2 Medium Ripe Bananas
• 2 Eggs Beaten
• 1 tbsp Honey (For brushing on muffin tops)

Method;

Preheat the oven to 190c. Line a muffin tin with greased muffin cases. Place an ovenproof container with water at the bottom of the oven.
Add the butter to a saucepan and heat gently over a low heat until melted, remove it and allow to cool completely.
Peel and mash the bananas with a fork until they are smooth.
Add the eggs, mashed banana, vanilla extract, Glenisk Organic Bio Kids Banana Yogurt to the melted butter, mix and set aside.
Sift the flour and the baking powder into a large mixing bowl. Add the fudge and sugar into the sifted flour and mix.
Make a hollow in the centre of the mixture and add the egg, yogurt banana mix. Stir with a spoon until it comes together, it should still look quite lumpy.
Spoon the mixture evenly into the cases and bake for 20 minutes until risen and firm to touch. Allow them to cool on a wire rack for 5 minutes and brush them with honey.
