These 3-ingredient coconut clusters are the best biscuits you’ll taste

In need of a quick midweek sweet treat? Look no further.

If you find yourself often looking at recipes thinking, “Hell yeah, I could make that!” before realising you don’t have the time, ingredients or energy left, this is the one for you. All win and no whine, it takes no time at all to whip this dreamy biscuit up.

So, get cooking (and eating). You won’t be sorry.

Ingredients:

  • Just over 1 cup of melted dark chocolate (75-80%)
  • 1 1/2 cups of whole almonds
  • A handful of coconut shavings
  • Optional: handful of dried cherries or cranberries

Directions:

1. Line a baking sheet with greaseproof paper. Start melting dark chocolate pieces over a very low heat. If you want a sweet fruity taste, throw a handful of some dried cherries or cranberries into the pot, once the chocolate has melted.

2. Place a teaspoon of melted chocolate on the paper, then scatter with a few nuts. Drizzle the nuts with one tablespoon melted chocolate. Repeat until you use all the chocolate (and your mouth is watering profusely).

3. Sprinkle coconut shavings over each tiny, delicious delight.

4. Transfer to the fridge for 10 minutes to chill. Remove when firm. (Try not to eat the lot!)
