3 seriously delicious (and super-quick) pasta recipes for tasty mid-week dinners

Comfort food season is upon us.

And nothing is like a big, aul’ bowl of pasta when it comes to food that makes us feel all warm and cozy.

But if you feel like you have exhausted that bolognese recipe or getting a little fed up with the usual pesto pasta, we have rounded up three seriously taste (and surprisingly easy to make) pasta dishes that are bound to go down a treat with the entire family:

1. Butternut squash, walnut and sage pasta

If there is one vegetable the shops and farmer’s markets are brimming with right now (apart from pumpkins, of course), it is the humble butternut squash. And this pasta dish really brings out the very best of this tasty and seasonal favourite.

Ingredients
  • 2 cups cubed butternut squash
  • 1 tablespoon olive oil
  • 1 tablespoon butter (or vegan butter or more olive oil)
  • 1 small shallot, sliced
  • ¼ cup chopped sage leaves
  • ¼ cup chopped walnuts
  • ½ cup cooked chickpeas
  • 1-2 cloves of garlic, finely chopped
  • big squeeze of lemon
  • splash of balsamic vinegar
  • 4-6 oz. spaghetti or linguine (& save some pasta water)
  • a few handfuls of chopped spinach (or kale or chard)
  • ½ cup chopped parsley
  • grated pecorino cheese, optional, to taste
  • salt & pepper

2. Lemon chicken pasta

We think we can pretty much guarantee that the entire family (picky eaters included) will ask for seconds of this seriously tasty pasta dish.

Ingredients

  • 10 ounces linguini
  • 2 tablespoons olive oil
  • 5 cloves garlic, roughly chopped
  • 1 shallot, roughly chopped
  • 4 ounces shitake mushrooms, sliced
  • 6 ounces crimini mushrooms, sliced
  • 1 lb chicken thighs, cut into 1 inch pieces
  • 1 teaspoon red pepper flakes
  • 1 bunch chives, snipped
  • 1 lemon, zested and juiced
  • handful of shredded italian mix cheese
  • kosher salt and freshly cracked black pepper

3. Browned Butter Fettuccine Alfredo

The browned butter holds the key to this dish’s amazing flavour– try it once, and you’ll be cooking it forever more.

Ingredients

1 pound dry fettuccine
6 tablespoons unsalted butter
2 garlic cloves, thinly sliced
1 pint heavy cream
4 ounces grated Parmesan
1/2 cup frozen green peas
salt and cracked black pepper to taste
