These banana chocolate chip baked oatmeal cups are the perfect grab-and-go breakfast

You know those mornings…

The ones where nobody can find their shoes, where the math homework has gone missing too, where you suddenly discover you are out of Cheerios, and where nothing goes to plan.

I know – we all have those mornings.

And that is why being prepared is always a good idea. And by being prepared we mean having a batch of these Banana Chocolate Chip Baked Oatmeal Cups is the freezer at all times – ready to be defrosted and eaten with one hand, as you are (finally) heading out the door.

(Oh – and PS: They are great for lunchboxes too!)

Banana Chocolate Chip Baked Oatmeal Cups

Ingredients

  • 3 cups rolled oats
  • 1 tsp baking soda
  • 1 banana
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 2 Tbsp mini chocolate chips

Instructions

  • Preheat oven to 180 degrees C.
  • Combine the rolled oats and baking soda in a mixing bowl.
  • Mash the banana.
  • Combine the banana and liquid ingredients together.
  • Add the liquid ingredients to the dry ingredients.
  • Mix in the mini chocolate chips.
  • Pour the mixture into a muffin pan.
  • Bake oatmeal cups for about 25 minutes, or until edges are slightly browned.
  • Serve and enjoy, or store in refrigerator for up to two weeks!
