BBQ: 10-minute melon kebabs (with a little alcohol)

You may not be a mixologist but, your friends will think you’ve done a course in cocktail-making after tasting this. Rather than stocking the fridge and ordering takeaway – take ten minutes and make this tonight. 

You’ll have something to look forward to. All. Day. Tomorrow.

Ingredients

A big ol’ watermelon

A bottle of Patrón Tequila (I often use Bombay Sapphire gin and cut the salt)

15 skewer sticks

3 limes

Fine rock salt

Method

1. Cut a simple egg cup shaped hole in the melon with a sharp knife.

2. Open the bottle (I know, I know…). Carefully place the bottle edge into the hole and press in firmly until stuck.

3. Leave the bottle stuck in the melon and place in the fridge overnight.

4. Remove the bottle, cut off the green skin and cut the melon into little cubes.

5. Lace the lime in salt and thread every second melon cube with a lime wedge onto the skewers.

Suggestion If you fancy a diluted version, pop the melon cubes into some fresh orange juice for the most beautiful drink you’ve ever tasted. Fact.

FYI My melon skewers can also be made (sans the liquor) to fire on the BBQ. Eat with a coconut yogurt dip. Heaven.
