3 berry-packed recipes to kick start your New Year

Got a touch of the January blues? Fear not, we’re here to help you beat it with Janu-berry! 

Not only are berries packed with vitamins, folic acid and potassium, they also make a tasty addition to so many different dishes.

Check out some of our favourite berry recipes this month.

1. Berry Morning Starter

Get your day off to a great start with this super filling treat!

Ingredients (serves 1)

  • 125g pot of natural low fat yogurt
  • 1/2 banana
  • 1 cup of Keelings strawberries
  • 1 handful of Keelings blueberries
  • 1 tsp oats
  • 1 tsp. of chia or linseed
  • 1 tsp. wheat germ

How to make it:

  • Slice a banana and chop the berries
  • Place the yogurt, fruit, oats, chia or linseed and wheat germ into a blender or food processor
  • Blend the ingredients until they are fully incorporated and no large chunks of fruit remain
  • Pour it into a glass, serve the smoothie

2. Chicken and Strawberry Salad

A tasty weekend salad with a strawberry twist.

Ingredients (serves 4)

For the fresh strawberry dressing:

  • Handful of Keelings strawberries
  • 1 tbsp. apple cider vinegar
  • 1 tbsp black pepper
  • 1-2 teaspoon honey
  • 2 tbsp olive oil

For the salad:

  • Romaine lettuce leaves
  • 2 cooked chicken breasts sliced
  • 1 avocado sliced
  • 1-2 red onion chopped finely
  • 1 cup of Keelings strawberries sliced finely
  • 2 tbsp of pinenuts
  • 60g feta cheese crumbled

Method

Dressing: Place dressing ingredients in a blender and process until puréed.

Salad: Combine the lettuce, avocado, onion, pinenuts, feta, chicken, and strawberries together in a bowl. Divide the mixture between four plates.

Top each salad with about 4 tsp. of salad dressing, serve and enjoy!

3. Blueberry Cheesecake

A midweek treat the whole family will enjoy!

Ingredients (serves 2)

  • 1 punnet of Keelings blueberries
  • 1 lemon, finely grated zest and juice
  • 4 digestive biscuits, crushed
  • Knob of butter, melted
  • 2 tbsp. icing sugar
  • 125g-mascarpone cheese

Directions

  • Heat the blueberries, caster sugar and 1 tbsp. of the lemon juice in a saucepan
  • Heat gently until the blueberries start to burst. Take off the heat and leave to cool
  • While blueberries are cooling, mix the digestives and melted butter together
  • Spoon biscuit mix into 2 tall glasses
  • Add the remaining lemon juice, rind and icing sugar to the mascarpone cheese and stir through
  • Spoon the lemon cheese mix on top of the biscuit
  • Then spoon blueberries onto the cheese and pour over the berry syrup
  • Store in fridge until ready to serve.
