These gluten-free lamb skewers cure midweek munchies

Whether you’re dabbling in Paleo or on a strict gluten-free routine, here’s a new idea for your dinner menu.

This recipe makes a sensationally minty meal; plus did you know that lamb is the closest to organic meat that you can eat? Oh, and any yoghurt dip that is leftover can be used to liven up your lunch tomorrow. Mmmazing.

Serves: 4. Prep Time: 5 minutes. Cooking time: 10 minutes.

What you need:

  • 400g organic minced lamb
  • 1 clove garlic
  • 1 tbsp freshly chopped coriander
  • 1 tbsp freshly chopped mint
  • 1/2 ground cumin
  • 1/2 chilli powder
  • 1/2 ground cinnamon
  • Rock salt & black pepper
  • 140ml low-fat natural yogurt
  • 1 bag crispy leaf salad
  • 8 bamboo skewers

What you need to do:

1. Preheat a BBQ, pan or griddle.

2. Fire the lamb, garlic, coriander, mint and spices together. Season well.

3. Divide the mix into 8 and roll into sausage shapes. Push a wooden skewer through each and press the mix onto the skewer.

4. Cook for 8-10 minutes, turning occasionally until cooked through.

5. Stir remaining mint into yoghurt and place in serving dish.

6. Serve cooked lamb skewers with crispy salad and prepared dip.

It’s time-saving, satisfies the munchies and the dip can also be used for tomorrow’s crudité lunch treats.
