When it comes to treats, nothing beats chocolate; I think most of us will happily agree.
The problem, of course, it that regular aul' chocolate bars aren't exactly doing our waistlines or skin any favours. Unfortunately.
But fear not, mamas. We have come across a recipe for healthy, raw "Snickers" bars that are so good you'll forget all about the store-bought, sugar-laden variety.
Are you ready to meet your new favourite treat?
Ingredients
For Bar Base:
- 1 1/3 cup oat flour
- 1/3 cup almond flour
- 1/3 cup peanut flour (or more oat flour)
- 1 cup vanilla protein powder of choice
- 1/2 cup honey, agave or maple syrup
- 1/2 cup nut butter of choice
- 2 tablespoons coconut oil
- 1/3 - 1/2 cup almond milk
Caramel Layer:
- 1/2 cup pitted medjool dates, soaked in hot water
- 2 tablespoons coconut oil, melted
- 2 tablespoons nut butter, softened
- 1/2 cup roasted peanuts
- Optional: English Toffee Stevia Drops (to taste)
Chocolate Coating:
- 1 cup dark chocolate pieces, melted
- 2 tablespoons coconut oil
Directions
Base
- Mix all dry ingredients for the bar base in a large mixing bowl and set aside
- In a small saucepan combine sweetener, butters and oil until fully combined, if using flavourings or stevia drops add those into this mixture -- set aside when finished
- Pour sweetener/butter mixture over our dry ingredients and stir thoroughly, If your dough is too dry -- add a tablespoon at a time of almond milk or water until you can get a large ball of dough
- Press dough into an 8x8 pan lined with foil or plastic wrap
- Set in fridge for 15 minutes before adding ganache
Caramel Layer
- Drain the water from your dates that have been soaking in hot water for 3-5 minutes and add into a food processor or blender
- Add in melted coconut oil, nut butter and stevia drops
- Blend until you have a thick creamy 'caramel'
- Remove bars from fridge, spread 'caramel' layer evenly over bars and sprinkle peanuts over caramel - use your hands to gently press the peanuts into the caramel
- Place back in the fridge to set for another 30 - 60 minutes until firm
Assembly
- Once bars are completely set cut them into as many bars as you'd like -- I made 10 very large bars -- you can choose less or more!
- Melt down your chocolate and coconut oil in the microwave and stir until lump-free
- Dip each bar and set on wax paper to dry
- Enjoy! Store left over bars in the fridge.
