Super-healthy lunchbox ideas for every little fusspot

In need of some lunch-spiration? Look no further.

Having a good selection of fun but healthy lunch box ideas in your arsenal can make all the difference. Skip the sandwiches and fill their lunch boxes with some great surprises!

Here are some super tasty ideas to get you going…

 

 

Homemade hummus and veggies

Ditch the sandwiches and whip up a good batch of hummus. Whiz up a can of chickpeas, a tablespoon of tahini, a teeny bit of garlic and some lemon juice and olive oil. This is another major crowd pleaser, and a great way to get your little ones chomping on fresh veggies. Chopped peppers, baby carrots, cucumber and celery are all great options for dipping.

Mango and banana smoothie

Popping in a fresh smoothie along with the lunch box in the morning is great way to ensure your little ones are getting their five a day. To make one litre, cut one medium mango down either side of the flat stone, then peel and cut the flesh into chunks. Peel and chop one banana. Put the chopped fruit along with 500ml orange juice into a blender, process until smooth, pour over ice cubes. Delish.

Prosciutto e melone (Parma ham with melon, Italy)

Another super-speedy lunch box treat, these are a really great healthy option. Chop the melon into miniature slices and wrap in their favourite ham. Simples.

Healthy pasta

Perfect for when the temperatures take a dip. The night before, dry up a small onion and dice any vegetables you have in the fridge (eg. carrots, mushrooms, peppers and broccoli). Once the veggies have browned, add half a can of tinned tomatoes, one teaspoon of tomato puree and a tablespoon of balsamic vinegar. Cook fominutes on a medium heat until the sauce cooks down. Add cooked whole-wheat pasta to the sauce before placing in a bowl.

Top tip: In the morning heat up the pasta, pour into a flask and it will keep warm until lunchtime.
