You couldn't make it up: As the June bank holiday weekend kicks off across Ireland, temperatures are creeping ever upwards with highs of 24C predicted throughout Saturday, Sunday and Monday. This calls for a celebratory drink.
And how best to mark what may arguably be the best summer weekend in Irish history? By busting out the gin and ice bucket, that's how.
Once the kids are passed out from that long, hot day at the beach, retire to the garden with a tall glass of something cool and refreshing: A gin and tonic slushie.

another reason to love the warmer weather: Frozen booze. Whether you serve them up at a barbecue or savour them à deux with your other half before a romantic dinner, these babies are what summer was made for.
Serves 2
- 100 ml gin
- 200ml tonic water
- Juice and zest of one lemon
- 2 tsp sugar
Method
- Mix all your ingredients (except the zest) together and allow to sit for five minutes until the sugar dissolves.
- Pour the mixture into a plastic dish and freeze for two hours.
- Once a decent amount of ice begins to form, remove from the freezer and crush the ice using a fork.
- Immediately transfer to two glasses, sprinkle with lemon zest and serve.
This recipe is easy to double for guests and the flavour possibilities are endless; try using lime or grapefruit juice instead of lemon, or adding a dash of Aperol and a shot of orange liqueur.
