One way to fire up your children’s creativity on rainy days at home is to get all hands on deck for a bit of a baking session. Not only is baking with your toddlers a fantastic way to teach them new skills and independence, but it also guarantees you a tasty treat to make those movie marathons even sweeter.

This cookie recipe features two types of chocolate with two types of nuts, and it’s a hit with kids and adults alike. Ingredients

  • 110g butter, softened
  • 80g caster sugar
  • 70g light brown sugar
  • 2 tsps vanilla extract
  • 200g plain flour
  • 1 egg
  • 1/2 teaspoon baking powder
  • 25g roasted pecans
  • 25g roasted hazelnuts
  • 25g white chocolate chip
  • 25g dark chocolate chips

Method

  • Preheat your oven to 190C.
  • Melt the butter for 30 seconds in the microwave.
  • Beat the butter, caster sugar and brown sugar together in a bowl until you’re left with a creamy mixture.
  • Add the egg and vanilla essence to the mixture and beat until they’re all combined.
  • Sift the flour and the baking powder into the bowl and mix well.
  • Stir in the chocolate chocolate chips and nuts.
  • Using a cookie scoop, scoop up small balls of cookie dough onto a baking tray lined with non-stick lining and place in the oven. Cook them in batches or on multiple trays.
  • Cook the cookies in the oven for 8-10 minutes, or until they are golden brown.
  • Leave them to cool before enjoying.
