Fresh Caprese Salad With A Twist
(Serves 4-6 people)
Ingredients
Salad
- 2 balls good-quality mozzarella cheese
- 300 g ripe mixed tomatoes **
- Homemade croutons
- Small bunch of radish
- 80g Calamata olives
- sea salt
- freshly ground black pepper
- extra virgin olive oil
- 1 punnet of Basil Micro-herb
- Mixed seeds such as seseame, sunflower and pumpkin (optional)
** Try and use yellow, hybrid, cherry, rosa or vine tomatoes to create contrasts and shapes
Basic Salad Dressing
- 60ml Extra virgin Olive oil
- 15ml Apple cider vinegar
- 5ml Mustard
- Pinch of salt
Method
Salad
- Using a large platter, place the cheese first. You could tear it into chunks or slices or leave whole.
- Place the rest of the ingredients on the platter and garnish with micro-herbs, salt and pepper, ending
- with a scattering of mixed seeds. Dress with olive oil or dressing.
Basic Salad Dressing
- Add all of the ingredients to a jar, screw on the lid, and shake until blended. You can also whisk the ingredients together in a bowl or whirr them together in a blender.
- Taste and adjust seasonings if desired. Add to salad, toss, and serve.
- Keep leftover dressing in a sealed jar in the refrigerator for 2 – 3 days.
